Chickpea flour, carrot, and fava bean fritters

Instructions

Grate the carrots and transfer them to a bowl with the cooked fava beans; add salt and pepper, and let sit for a few minutes.

Now add the spices, salt, pepper, chickpea flour, and water; mix until the mixture is fairly thick.

Line a baking sheet with parchment paper and drizzle a few tablespoons of oil over the paper; form small balls with the chickpea mixture and flatten them directly on the baking sheet.

This will make about 8 fritters.

Drizzle the fritters with more extra virgin olive oil and bake them in a preheated oven at 180°C for about 20 minutes; halfway through baking, flip them and cook until golden brown.

Peel the avocado, remove the pit, and blend it with the lemon juice; season with salt and pepper.

Serve the fritters (either cold or warm) with the avocado sauce.
