Buckwheat
Buckwheat is a herbaceous plant whose grain-like seeds develop after it has finished flowering. It is a dark colour and has a strong flavour; it is naturally gluten-free with a high fibre content and is a source of vegetable protein.
In the kitchen, it can be boiled and eaten with vegetables, beans or pulses or as an ingredient for soups, side dishes and salads.
